The best is light S wind or no wind. When thermals are good, it is possible to take off also at N,W,E winds (until 1-2 ms), but you have to run very fast as the take off place is not steep.
Area is very good for XC flights as there are plenty of thermals ahead coming from fields.
Take-off
Mildly graduating big grass field. If no wind one needs to run a bit. After take off proceed directly straight above ridge. In case you will not find any thermal you will land in the field down ahead.
Landing
Several possibilities of landing.
1) Next to the ranch (directly in the straight line from the take off) are several wide open spaces. Beware of sheep, cattle (shits produced from the as well) and electric wiring
2) On the NE side of the village are fields suitable for landing - when there is no crop there.
Forecasts are planning aids, not safety clearance. Check current observations, official airspace and NOTAM information, local rules and your own experience before every flight.
